These days there don’t seem to be enough affordable but healthy snacks around. Everyone loves a good Nakd Bar, although they are pretty darn pricey, and Anya (my youngest) is utterly obsessed with them. In fact, so much so that we were buying in a couple of boxes a week without even realising it, but recently I’ve been hard pressed for cash and so have had to stop buying them. After a long hard think and 5 billion tantrums, I decided to recreate them myself by purely looking at the ingredients label. To be honest I don’t know why I didn’t do this a long time ago as I’m not one to buy packaged goods – especially not plastic wrapped ones – and it’s always cheaper tomake things yourself as you can bulk buy ingredientsplus you aren’t paying for extra packaging, marketing, and overall product design.

My homemade Berry Nakd Bar recipe is made with just 4 simple ingredients and tastes just as good as the real thing (if not better)!

As I had some freeze-dried strawberry powder laying around I decided to make the Berry Nakd Bar – usually, it’s made with raspberries but I knew Anya wouldn’t mind at all so long as it remotely resembled her favourite treat. Thankfully, she loved them, in fact, she said that they tasted even better than the original ones and my other 2 agreed. So definitely a winner! I now make up new batches in the morning before she goes to nursery if I’ve run out of them (orforgotten to make them over the weekend) because they are soooo, so simple and fast to make. It’s also good fun to get the kids involved because they can easily weigh out the ingredients with you and throw them into the food processor (with careful supervision of course!). If you opt fordeglet noordates over the regular ones you’ll want to keep your bars chilled otherwise they get a little floppy – I use them because I think they taste better but it’s down to personal preference. I really wouldn’t opt for Medjool dates as they are even stickier and carry a much more caramel punch than regular ones.

Feel free to play around with this recipe if you’d like – try out a different freeze dried fruit powder or another type of nut, and for an extra special treat dip the ready-madebars into raw chocolate. I think doubling up the freeze-dried fruit powder makes them super delicious but obviously, if you’re on a budget it’s not the best thing to do! Although I made these for my 4-year-old daughter it doesn’t mean that adults can’t enjoy them either. They make for great pre- or post-workout snacks and good if you find yourself on the go constantly. You don’t have to faff aroundand shape them into bars you can just roll them into balls and go. I chose to weigh mine out into 35g portions to keep the portion size the same but it’s totally up to you if you want to do this. Personally, I have poor portion control anyway but when it comes to kids I think it’s important to stay on top of how much sugar they’re eating – even if it is unprocessed and natural.

Ingredients

  • 380g dates or deglet noor (pitted)
  • 120g cashews
  • 70g raisins
  • 12g/ 2 tbsp freeze-dried strawberry powder (or any other berry powder)
  • A few drops of Strawberry Medicine Flower Extract (optional)

Instructions

  1. Place all ingredients in the bowl of your food processor. Pulse a few times before processing until the dough comes together and is fairly smooth. You will see a few small specs of cashew running through your dough but nothing too chunky.
  2. Portion into 35g balls. Shape into bars if you wish and store in an airtight container, lined with greaseproof paper, in the fridge or a cool dark place. Consume within 2 weeks of making.
